Compared to other quinoa varieties, it has higher protein, minerals, and vitamins (phosphorus, potassium, magnesium, calcium, among others). It is an easily digestible food. Contains large amounts of antioxidants, including quercetin and kaempferol. It contains soluble fiber that helps reduce blood sugar levels, lower lipoproteins, and increase the feeling of satiety. The glycemic index of quinoa is low, but its high carbohydrate content must be taken into account.
