Vegetables preserve well in an environment with 80-95% relative humidity. That is why it is sometimes thought that it is good to store them in plastic bags. However, plastic is not a good system since it traps the ethylene gas that makes the vegetables go quickly from ripe to past. For a good conservation the vegetables need to be clean, with an adequate level of humidity, at low temperatures and with good air circulation to reduce the presence of ethylene gas. For it: Wet the bag and drain. Wash vegetables thoroughly in plenty of water. If they are leafy vegetables, remove the damaged leaves. Put the vegetables in the bag and keep at cold temperature (between 0 and 4 ºC). If the bag dries after a few days, it is enough to rewet it. The water in the fabric slowly evaporates and transports the moisture from the vegetables to the outside of the Vejibag bag. In this way a humid environment is created, where the vegetables can breathe and the deterioration is delayed.
